I love cupcakes. Maybe almost as much as I love brownies. They’re one of my favorite desserts to make and share because of their individual size and the ease of which they can be served. No need for knives or plates for serving. Just grab one and go! They’re one of my go-to desserts for parties of any kind, especially ones where there will be lots of kids because they’re significantly more mess-free than most other desserts.

While I love all of the traditional cupcake flavors – chocolate, vanilla, strawberry, etc – sometimes I want some something a little more original. That’s what these White Chocolate Coconut Pecan Cupcakes are. Three distinct flavors packaged into one delicious homemade cupcake recipe.

White chocolate is such a nice alternative to vanilla, it’s an unexpected surprise when you bite into the cupcake because most people naturally assume that white cupcakes are vanilla. But not these ones! I love surprising people with unexpected flavors.

To accompany the white chocolate, these cupcakes are also filled with coconut. Not a ton – these are not straight up coconut cupcakes by any means. Instead, the coconut flavor complements that white chocolate so that it’s noticeable but not overpowering. Coconut lovers will appreciate the subtle flavor while everyone else will not feel overwhelmed by the coconut.

Though these are not vanilla cupcakes, I did choose to ice them with vanilla icing to pull it all together. The flavor is much milder than other possible icing flavors, which works well with all of the other ingredients.

And, to top it all off – pecans! The pecans are what really pulls this recipe together. They provide texture and a bunch of crunch, along with a burst of flavor.

Until I made these White Chocolate Coconut Pecan Cupcakes, I never considered putting all three flavors together in one but man, it really was a genius idea. These cupcakes are GOOD. “Have to refrain from eating the entire batch alone” good.

If you CAN refrain from eating the entire pan alone, I also realized something about cupcakes while I was making these – their individual size is not only great for avoiding a mess but very practical for dessert on a diet. Or, dessert portion control in general!

I try to eat healthy 95% of the time but, as you may have noticed, dessert is my weakness and it can be SO easy to overindulge. A big slice of cake, a brownie plus the crunchy edges, a heaping bowl of ice cream…it’s beyond easy to just go a little overboard with dessert. With cupcakes, like these White Chocolate Pecan Cupcakes, you already have the perfect individual serving size ready to go!

No crazy ingredients in this recipe – besides the obvious main ingredients, everything else is typical baking ingredients you probably already have on hand.

In a large mixing bowl cream together butter and sugar. Add in eggs one at a time, mixing well with each egg.

Melt down your white chocolate and add it to the mixture. And in a separate bowl, sift together your flour, baking soda, and baking powder.

Once well blended, add in coconut, vanilla, and pecans. Mix well.

Pour batter into cupcake tins and bake for about 15 minutes, or until a toothpick comes out clean.

Ingredients

  • 1/4 lb. of White Chocolate
  • 1 cup of Butter
  • 2 cups of Sugar
  • 4 eggs
  • 2 and a 1/2 cups of Flour
  • 3/4 of a teaspoon Baking Soda
  • 1 teaspoon of Baking Powder
  • 1 cup of Buttermilk
  • 1 cup of Coconut
  • 1 tablespoon of Vanilla
  • 1 cup of Pecans (crushed)
  • 1 tube of Vanilla Icing

Instructions

Preheat oven to 400 degrees and grease a cupcake pan.

In a large mixing bowl cream together butter and sugar.

Add in eggs one at a time, mixing well with each egg.

Melt down your white chocolate and add it to the mixture.

In a separate bowl, sift together your flour, baking soda, and baking powder.

Add you flour mixture slowly to your wet ingredients, alternating with your buttermilk, and mixing continuously.

Once well blended, add in coconut, vanilla, and pecans. Mix well.

Pour batter into cupcake tins and bake for about 15 minutes, or until a toothpick comes out clean.

Let cool and icing each cupcake.
