I love pound cake. It’s such a simple dessert but I love the density of the texture and the sweet flavor. Plus, I also love that you can sometimes kiiind of get away with eating a slice for breakfast with a cup of coffee, even though it’s too sweet for any reasonable human to consider a real breakfast.

Then again, I never claimed to be reasonable. 😉

But what do I love more than pound cake? Strawberry Pound Cake! All of the things I love about pound cake with bits of strawberry throughout as well as a delicious strawberry glaze on top. Yum.

It may seem weird to be posting about strawberries as we head into fall and winter, which are definitely not the typical strawberry season, but I love this recipe so much I couldn’t help myself. Eventually, it will be strawberry season again…and the red glaze on this Strawberry Pound Cake makes it super festive for the holiday season too!

Fresh strawberries work best in this Strawberry Pound Cake. Even when they’re not in season and I have to pay extra for them, I truly believe fresh strawberries are worth it. That said, you can make Strawberry Pound Cake with frozen strawberries…you’ll just want to defrost them completely before making the recipe. I find that they’re always smaller and mushier than fresh strawberries, though, so if you can avoid them…just splurge for the fresh strawberries in the winter or wait for strawberry season.

The sweetness of the pound cake with the tart strawberry flavor combines perfectly for this pound cake. I think adding fruit to pound cake definitely makes it more of a potential breakfast cake too. However, it’s that delicious strawberry glaze that makes this Strawberry Pound Cake a real hit. I just want to lick it off the cake and eat a spoonful of it by itself!

Did I mention how easy this Strawberry Pound Cake is to make? You literally only need two bowls to make it! And you probably already have all of the ingredients in your cupboard.

The delicious strawberry glaze consists of only two ingredients – mashed strawberries and powdered sugar! If you’re cooking with kids in the house, mashing the strawberries is a fun way to let them help bake.

How to make Strawberry Pound Cake:

In a bowl, mix together flour, baking powder and salt.

In a separate bowl, mix together the wet ingredients.

Add sugar to the wet ingredients and stir well.

Add the dry ingredients to the wet ingredients. Stir until well combined.

Add strawberries to the batter and stir.

Pour Strawberry Pound Cake batter into greased pan.

Mash strawberries to use in the glaze.

Combine mashed strawberries and powdered sugar to make the strawberry glaze.

Cool Strawberry Pound Cake completely. Top with glaze.

  • 1 1/2 cup all-purpose flour
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1 cup plain greek yogurt
  • 1 cup sugar
  • 3 large eggs
  • 1 1/2 tsp vanilla extract
  • 1/2 cup vegetable oil
  • 1 cup diced strawberries
  • Glaze:
  • 1/2 cup smashed strawberries
  • 2 cups powdered sugar



Preheat the oven to 350.


Spray a loaf pan with non-stick spray.


In a bowl, mix together flour, baking powder and salt.


In a second bowl, mix the wet ingredients: greek yogurt, eggs, vanilla extract and oil.


Add the sugar to the wet ingredients and mix well.


Pour the wet ingredients into the dry and stir until combined.


Fold in the diced strawberries to your batter.


Pour the batter into the loaf pan.


Bake for 45-55 minutes or until the center comes out clean with a toothpick.


Once baked, remove from oven to cool.


Combine the smashed strawberries and powdered sugar to form a glaze.


Pour over the cooled pound cake.


Allow to set before serving.
