We’re now officially in the midst of winter. Fortunately, this winter hasn’t been too hard, as far as snow and subzero temperatures go, but it’s still much colder than I consider ideal. I’m already counting down the days until spring and 70 degree days.
But, here we are with months to go so I decided to combat being cold in the best way I know – soup! If you couldn’t tell from my other soup recipes (like my Meatball and Potato Soup and Instant Pot Chicken Noodle Soup), there are few things I love more than a big bowl of steaming hot soup on a cold winter night.
This slow cooker Potato Soup is one of my all-time favorite soup recipes and, after trying out several, is what I consider the best potato soup recipe.
It’s creamy. It’s cheesy. It’s filled with bacon. What more could a busy mom ask for in this easy creamy potato soup?
Answer – not much.
This crockpot Potato Soup is the ultimate fix it and forget it winter dinner. Toss the ingredients into the crockpot in the morning and then with just half an hour left, follow a few simple instructions to make it even creamier.
Bacon and potato soup is a hit among the entire family. My kids love it. They like anything with bacon and in their eyes, the more cheese the better. (No idea where they get that mentality from…) It’s a dinner I can prepare one night for dinner and I will hear zero complaints if I try to serve it again the next day.
Of course, that’s assuming there is any left for the next day which is a rare occurrence. Sometimes we’ll have this crockpot bacon and potato soup for dinner one night and then as a side dish or appetizer the second night. If I’m feeling generous, I might even give my husband a bowl to take to work in the morning.
By no means is this a New Year’s Resolution diet soup. If you’re looking for that, this Weight Loss Vegetable Soup is the recipe for you. But if you’re looking for creamy, cheesy goodness, you can’t go wrong with this easy creamy potato soup!
How To Make Easy Creamy Potato Soup:
In your crockpot, add chicken broth, cheddar cheese soup, onion, garlic, salt and pepper.
Add potatoes. Stir to combine.
Cook on high or low, according to recipe suggestions.
With 30 minutes left, mash about half of the potatoes.
In a saucepan, create half and half and flour mixture.
Add to crockpot, along with sour cream and cheddar cheese. Stir throughout the last half an hour so that all ingredients are thoroughly combined.
Top each bowl with bacon, additional cheese, and green onions before serving.

- 4-5 medium russet potatoes, chopped into 1-2 inch pieces
- (2) 14 oz. cans chicken broth
- (1) 10.5 oz. can cheddar cheese soup
- ½ medium onion, chopped
- 3 cloves of garlic, minced
- 2 cups half and half
- 4 tbsp butter
- ¼ cup all purpose flour
- ½ cup sour cream
- 8 slices of bacon cooked and chopped
- 2 cups shredded cheddar cheese, divided
- ½ cup chopped green onions
- Salt and pepper to taste
In your crockpot, add chicken broth, cheddar cheese soup, potatoes, onion, garlic, salt, and pepper. Stir to combine. Cook on low, 4-6 hours, or 3-3 ½ hours on high.
Once there are 30 minutes left on your cook time, use a potato masher to mash up about ½ of the potatoes in the crockpot. Then, in a medium-sized saucepan, melt butter. Once butter is melted, slowly whisk in flour.
Then, whisk in half and half. Cook on medium heat, stirring frequently until mixture begins to thicken. Add half and half mixture to the crockpot. Also, stir in sour cream and 1 cup shredded cheddar cheese.
Stir occasionally during the last 30 minutes of cook time to incorporate all the ingredients.
Once finished, serve warm and top with extra shredded cheese, bacon, and green onions.
