I’ve been on a mission towards a healthier lifestyle lately, starting in the kitchen. For me, that means finding alternatives to my favorite foods. I find that if I try to just eat salad every single day I quickly feel deprived and want to give up. And, for most of us, salad every night for dinner is not a realistic goal. Sure, it’s easy to do for a week or two but as a longterm healthy lifestyle, it’s just not likely.

One of the hardest things for me to swap out and reduce has been carbs – specifically potatoes. I grew up eating potatoes with nearly every meal and I love how easy and versatile they are. You can literally cook potatoes in a hundred different ways.

Unfortunately for me, potatoes are not the most nutritious thing to pile on your plate so I knew they’d have to go. I’ve started swapping regular potatoes for sweet potatoes but I also wanted something new, something less sweet and more versatile.

Which led me to turnips.

Turnips are a root vegetable and contrary to popular belief, they are a non-starchy root vegetable. Their nutritional value is significantly higher than potatoes though they can be used in many of the same ways. Turnips can be added to soup, boiled and mashed, roasted with other root vegetables, etc.

Of course, they have a much more distinct flavor than potatoes. There is no denying that. However, I happen to LOVE the earthy flavor of turnips. Delish.

After trying turnips in a variety of ways, I came up with these Oven Roasted Turnips with Thyme and Parmesan.

They check all of the boxes I’m looking for in recipes – healthy, quick, easy and delicious.

These oven roasted turnips are reminiscent of a traditional “grandma” recipe but the parmesan adds a modern twist. Besides, we all know cheese makes everything better! Though if you’d prefer to make these oven-roasted turnips vegan, just omit the parmesan.

Turnips actually have a very low-calorie content, with just 28 calories per 100 grams. That makes these Oven Roasted Turnips with Thyme and Parmesan a fairly low calorie but filling side dish. I love serving these in place of roasted potatoes or any potatoes at all with dinner. It goes equally well with all proteins, like chicken or fish, and I love to serve it with another serving of different veggies for a fulfilling, healthy and delicious meal.

These Oven Roasted Turnips with Thyme and Parmesan could not be easier to make either. Simply toss the diced turnips with oil, nutmeg, salt and butter and top with parmesan and thyme before baking. A little thyme goes a long way in providing flavor so be sure not to overdo it. Add parmesan according to personal preference – I find freshly grated parmesan to be the best, with only a small amount added.

Place your peeled and cut turnips into a bowl, and add in the olive oil.

Add the melted butter to your bowl.

Sprinkle in salt to taste.

Add the nutmeg to the mixture in the bowl.

Sprinkle in salt to taste.

Mix all of the ingredients well, and place the turnips into a greased baking dish.

Sprinkle on Parmesan cheese to taste, and top the turnips with 3-4 fresh sprigs of thyme. and Bake uncovered for 15-20 minutes until the turnips are browned on top and fork tender.

Ingredients

  • 8 oz. Turnips (peeled and cut into smaller slices)
  • ½ tbsp. Olive oil
  • 1 tbsp. Butter (melted)
  • ¼ tsp. Nutmeg
  • 3-4 Sprigs of fresh Thyme
  • Parmesan cheese to taste
  • Salt to taste

Instructions

Preheat your oven to 475 degrees.

Place your peeled and cut turnips into a bowl, and add in the olive oil.

Add the melted butter to your bowl.

Add the nutmeg to the mixture in the bowl.
